Whether you like them plain, sweet or savoury, pancakes are the perfect way to turn your fry up into a feast.
Ingredients
- 25g butter
- 160g plain flour
- 3 eggs
- 1 tsp cinnamon
- 300ml milk
- 80ml water
Method
- Melt the butter in a frying pan and transfer it to a bowl or ramekin – you will use the melted butter to grease your pan between each pancake
- Sieve the flour and cinnamon into a large mixing bowl
- Make a well in the bowl. Break the eggs into the well and mix the ingredients together with a fork until all the egg has been absorbed into the mixture
- Mix the milk and water together in a jug. Slowly pour the milk/water mixture into the bowl, whisking constantly to make a smooth batter
- Put your frying pan on a high heat. Dip a paper towel into your melted butter and use it to grease your pan
- When the butter is bubbling, add a ladle of batter to the middle of your pan. Work the batter round the pan until the base is covered
- Cook the batter for about a minute on either side. Keep your pancakes warm while your hungry guests wait by placing a plate over a saucepan of boiling water. As you cook each pancake add it to the plate and cover with tin foil
- When all your pancakes are cooked serve with sugar, lemon juice, maple syrup, fruit, cheese, bacon or whatever takes your fancy!
